The Chevalier-Montrachet is all in finesse, power with a huge core.

In one generation, Henri Boillot has dramatically lifted the quality of his Domaine wines and created a boutique négoce to rank among the very best in the region. Thanks to Henri’s talent, these wines display such a high level of detail and complexity that it is fair to say that they are among the very best representatives of Burgundy. The Chevalier-Montrachet Grand Cru vineyard is located entirely in Puligny-Montrachet, just above the Grand Cru Montrachet. It is one of Burgundy’s most highly regarded grand cru white wines.

The lightly exotic bouquet opens up to notes of acacia, white flowers, and some orange zest. The nose is powerful, ever changing though very precise with great minerality to support the fruit. The mouthfeel is dense, focused and chiseled with a spectacular long finish. It can be paired with lobster, caviar, fish and a large array of cow cheeses. It will benefit from five to seven years of cellaring and can be kept up until 2032+. 100% Chardonnay.

At Domaine Henri Boillot, the work done in the vineyard is meticulous, following organic practices and aiming for very low yields that naturally concentrate the fruit. The grapes are sorted in the vineyard and harvested by hand. Arriving at the Domaine, the grapes are sorted again and then traditional practices are employed to make the wine. However, Henri and his son Guillaume make sure that the must and then the wine is never overworked. They intervene as little as possible to preserve the essence of the terroir’s identity.
