This Bourgogne Chardonnay is floral with hints of stone.

In one generation, Henri Boillot has dramatically increased the quality of his Domaine wines and created a boutique négoce of the highest reputation. The wines, honed by Henri’s prodigious talent, display such a high level of detail and complexity that it is fair to say that they are among the very best representatives of Burgundy’s finest. The Bourgogne Chardonnay fruits are comprised of 50% Meursault village vines and the remainder from St-Romain, Auxey-Duresse and Puligny-Montrachet village vines.

This wine is an overachiever, displaying a complex fresh nose of white to yellow peach, light floral notes with some hints of stone and minerality. The palate is dense on the attack and driven by citrus flavours on the finish. It could be paired with lobster, prawns or roasted white meat. The Bourgogne Chardonnay will be delightful to drink now if you decant it 30 minutes before serving.

Just their own vines. Mid yellow, quite robust nose, plenty of fruit if not quite the length of the great years, fresh acidity, zesty and makes one salivate. Still one of the best Bourgogne Blancs around. Drink from 2024-2026. 87-88 points - Jasper Morris, Inside Burgundy.

At Domaine Henri Boillot, the work done in the vineyard is meticulous, following organic practices and aiming to achieve very low yields to naturally concentrate the fruit. The grapes are sorted in the vineyard and harvested by hand. Arriving at the Domaine, the grapes are sorted again and then traditional practices are used to make the wine. However, Henri and his son Guillaume make sure that the must* and then the wine is never overworked. They intervene as little as possible to preserve the essence of the terroir’s identity. The maturation of the wine is done in 350 litre French oak barrels instead of the traditional Burgundy barrique of 228 litres. Henri believes that it works better to get the benefits of the oak maturation without adding too much oak taste.

*Must is the term for freshly pressed juice that for a red wine contains the skins, seeds and stems of the fruit. For a white wine must only refers to the juice.
