The Rolle Clarendon cuvée is a structured, floral and fresh white wine.

At Domaine Gavoty, the vineyards surround the winery on limestone soils. The Cuvée Clarendon is the top cuvée of the Domaine. The name pays tribute to Bernard Gavoty, the Domaine’s founder.

The Rolle Clarendon cuvée is made with a selection from the Domaine’s oldest vines. The Rolle is exclusively used in Provence. You will find a complex nose of pear and grapefruit, melted with a touch of honey and white flowers. The palate is structured, with the pear and floral notes coming forward, and a fresh and long finish. 100% Rolle.

You can match the wine with grilled fish, citrus-based dishes and oysters. It could easily age for another eight years in your cellar to get more texture and body."

This Rolle was harvested on the 22nd of September 2011 and pressed very gently. Unlike many of Provence’s whites, the Rolle doesn’t undergo any maceration with skins. This is unique to the Domaine as they want their amazing soils to express themselves. The entire harvest is destemmed and fermented in stainless tanks for four weeks. The wine is then bottled and released a few months later.
