Domaine de Cassiopée - Hautes-Cotes de Beaune Rouge "Paizets" 2023

This Les Paizets has a clear hedonistic feeling with delicate and lively elements.

Brand new estate in the heart of Sampigny-les-Maranges in 2020, Domaine de Cassiopée is run by Talloulah and Hugo Mathurin who are working hard to make a mark on this under the radar appellation. Domaine de Cassiopée sits on the eastern end within close proximity to the premier cru vineyards. These grapes have two thirds from a four-year-old planting on limestone rock, the rest from vines on granitic rock. These vines sit on the same hill as the Les Cotes

This vineyard is not far from the other, Les Côtes, but is quite a different soil profile: clay on limestone slabs. Here they find long bunches with small berries well aired, compared to bigger grapes with thin skins for Les Côtes. A cherry to ruby colour, very light volatile.
