Domaine Henri Boillot - Volnay 1er Cru "Les Caillerets" 2022
The "Les Caillerets" is a pretty, delicate and very complex wine.
In his generation, Henri Boillot has dramatically increased the quality of his Domaine wines and created a boutique négoce listed among the very best of the region. Today, the wines, created by Henri’s talent, display such a high level of detail and complexity that it is fair to say that they are among the very best representatives of Burgundy. The premier cru “Les Caillerets” is located on the site of an old quarry, with plenty of high density limestone. The vineyard is located in the south part of the village of Volnay, below the “Clos des Chênes”.
The bouquet sets the tone with plenty of delicate flavours, opening up on subtle spice notes, black cherry, blackcurrant and a very pleasant touch of wood. The palate is airy and elegant, with great concentration from the mid-palate to a very persistent finish. It can be paired with charcoaled rib eye, game, roast chicken, roast pork and a large array of cow cheese. It will benefit from one to two years of cellaring and can be kept up until 2028+.
The 2022 Volnay Les Caillerets 1er Cru shows the more nervy side of the village vis-a-vis the other Volnays in the range. White pepper, chalk, mint and crushed rocks add notable aromatic lift. There's gorgeous precision here, but readers will have to be patient, as the 2022 clearly needs time to be at its best. The 75% new oak is nicely judged. 92-95 points - Jasper Morris, Inside Burgundy.

At Domaine Henri Boillot, the work done in the vineyard is meticulous, following organic practices and aiming to achieve very low yields to naturally concentrate the fruit. The grapes are sorted in the vineyard and harvested by hand. Arriving at the Domaine, the grapes are sorted again and then traditional practices are used to make the wine. However, Henri makes sure that the must* and then the wine is never overworked. They intervene as little as possible to preserve the essence of the terroir’s** identity.
*Must is the term for freshly pressed juice that for a red wine contains the skins, seeds and stems of the fruit. For a white wine must only refers to the juice.
** Terroir is the specific combination of location, vineyard, climate and people that create a wine. Accordingly, different terroirs produce different wines.
