Tasting Notes

Vieilles Vignes Cabernet Franc is complex with dark fruit flavours.

This exquisite Chinon is made from the oldest vines of the Domaine – averaging 60 years. It is a blend from varying plots of gravel and sandy soil vineyards in the small village of Cravant-Les-Côteaux by the Vienne River.

The wine develops very well on the nose with notes of blackcurrant, red fruits, a subtle saltiness and some earthy flavours. The taste is complex; firm tannins, dark fruits and duration on the palate.

It pairs well with a braised beef dish, white meats or a platter of charcuterie. It is ready to drink if decanted for 30 minutes before service and could age another five to seven years. 100% Cabernet Franc.

"Chinon is showcasing some of the most complex straight Cabernet Franc wines in France. Domaine Alliet is delivering an outstanding wine here, delightful to taste. If you haven’t tasted wines from Chinon before, this is a good wine to discover the appellation."

The tiny and concentrated grapes of this Chinon are from the oldest vines of the Domaine. The small, concentrated fruit delivers a more complex wine. The grapes are harvested by hand and quickly brought to the winery to be destemmed and put in concrete square vats. In every step of the vinification, the Alliet’s are monitoring the evolution without intervening too much. During fermentation, they pump over the juice over the cap of berries to gently extract the positive elements of the grapes. They let nature do its job in order to preserve the terroir* taste as much as possible. In order to soften the firm tannins of the Cabernet Franc, the wine is matured in French oak barrels for twelve months. They use 500 litre oak barrels that are three to five years of age to preserve the fruity taste of this cuvée.

*Terroir is the specific combination of location, vineyard, climate and people that create a wine. Accordingly, different terroirs produce different wines.
