Domaine de Cassiopée - Hautes-Cotes de Beaune Rouge "Paizets" 2022
This Les Paizets has a clear hedonistic feeling with delicate and lively elements.
Brand new estate in the heart of Sampigny-les-Maranges in 2020, Domaine de Cassiopée is run by Talloulah and Hugo Mathurin who are working hard to make a mark on this under the radar appellation. Domaine de Cassiopée sits on the eastern end within close proximity to the premier cru vineyards. These grapes have two thirds from a four-year-old planting on limestone rock, the rest from vines on granitic rock. These vines sit on the same hill as the Les Cotes
Aromas of sweet red berries, exotic spices, plums and petals introduce the 2021 Bourgogne Hautes-Côtes de Beaune Rouge Les Paizets, a medium to full-bodied, fleshy and impressively textural wine that exhibits a deep core of fruit framed by powdery tannins that assert themselves on the elegantly mordant finish. William Kelley, Wine Advocate.
What we say
"An exciting new addition to the Burgundy winemaking scene!"
Technical notes
The reds are mostly destemmed, and matured in barrel (few of which are new) or concrete egg, depending on the cuvée.
