Domaine Joseph Colin - Saint-Aubin 1er Cru "Sur le Sentier du Clou" 2022
The “Sur le Sentier du Clou'' is a glossy, precise offering, displaying notes of ripe white peach, green apple and grapefruit oil.
Joseph Colin initially trained at Domaine Marc Colin, working alongside his brother, Pierre-Yves, to make the family wines. In 2016, Joseph decided to create his own Domaine, and, subsequently, inherited just over six hectares of vineyards from his family holding, representing about nineteen different appellations, to start his exciting new venture. “Sur le Sentier du Clou'' is on the band of 1er Cru sites bordering the village of St-Aubin proprer over the hamlet of Gamay, downslope from “Les Frionnes'' and on the upper shelf looking down at the other 1er Crus. It's comprised of white clay and limestone soil with 25-plus-year-old vines.
A pretty fresh colour with a light green tint. The flower and fruit balance on the nose is very engaging. Just a little flesh to the white fruit on the palate, with a thread of mineral acidity, this is clearly the balance that Joseph likes to strike. The bouquet is glossy but precise, displaying ripe white peach, green apple and grapefruit oil. The palate initially mirrors the nose of fleshy white stone fruits with additional layers of chalky minerality and endless, smoked saline tones. It can be paired with roast poultry, rich oysters, crayfish, scallops and white fish. You can drink it now with a 30-minute decant before serving or cellar it up until 2028+. 100% Chardonnay.

Technical notes
Only healthy grapes make it to the press; the wines are also handled as little as possible, therefore there is no bâttonage, filtration or fining and no sulphur is used during the winemaking process until racking where minimal amounts are used. Fermentation and maceration is processed in 350-litre oak barrels for 12 months, before three months in stainless before bottling.
