This Bouzy Blanc has lots of tension and chalky flavours.

The Paillards have been making Champagne and Bouzy Rouge for eight generations in the village of Bouzy, in the sub region of Montagne de Reims. Bouzy is one of only 17 villages in Champagne to have the highest classification of Grand Cru. The sparkling production of Champagne is world famous, but a boutique and lesser known production of still white wine - made from Chardonnay and Pinot Noir grapes, classified as Côteaux Champenois - deserves greater recognition.

Prominent chalky notes dominate before a backdrop of citrus, wet stones and small red berries. A strong acidity drives throughout with a few tannins showing along the way. The palate is very fresh and lively before a long finish and soaring mineral tones. It can be enjoyed now by decanting 25 minutes before serving, or kept for more than 10 years. It is ideal with seafood, oysters, spicy food and sushi. 50% Pinot Noir, 50% Chardonnay
