CHAMPAGNE PIERRE PAILLARD – BOUZY GRAND CRU "LES PARCELLES" 15
The "Les Parcelles" is exclusively a Grand Cru blend featuring 30% of reserve wine and the 2015 base wine (70%). It is a blend of 70% Pinot Noir and of 30% Chardonnay. After blending the cuvées, the wines are bottled and undergo malolactic fermentation. They mature on their own lees for four years. It is a much longer period of time than many of the other producers in Champagne. This is to achieve complexity and finesse. The "Les Parcelles" spends four years in Domaine Pierre Paillard’s deep cellar at 10 degrees to mature and gain tiny, silky bubbles, while developing the house style. This Champagne is sophisticated, versatile and ready to drink. Extra Brut – 1.8 grams per litre of dosage. Disgorged October 2019.
CHAMPAGNE DEHOURS - EXTRA BRUT NATURE
The "Brut Nature" is fully aged on lees, and clarified by natural decanting, without filtration or fining. It is an experimental, 100% Pinot Meunier cuvée that uses a high proportion of reserve wine from a perpetual reserve started in 1998. But most importantly, it is made using naturally selected yeasts (from Champagne Dehours' own vineyard) for the second fermentation in bottle. This, above all else, enhances the identity of the Marne Valley terroir.It is Ideal as an aperitif, with hard cheeses. But most important of all is the serving temperature. The golden rule is never below 12°C. Serve in large white wine glasses to allow the wine to express itself. Extra Brut – Dosage 0 g/l.
CHAMPAGNE DEHOURS - "OEIL DE PERDRIX" ROSÉ EXTRA BRUT NV
Dehours Champagnes are eagerly sought after by champagne enthusiasts for their renowned 'Meunier style'; bold, flavourful and demonstrating a clear terroir-orientated approach. The Oeil de Perdrix (Partridge eye’s colour) is fruity, round and very delicate. The red berries on the nose are sustained by a lovely citrus backbone. The palate is silky and rich with a composed energy, fresh and clean on the finish. It can be drunk now. It can be paired with fruits salads, as an aperitif or with grilled king prawns. Mostly Pinot Meunier with a little bit of Pinot Noir and Chardonnay. Extra Brut, no dosage.
