CHAMPAGNE DEHOURS

The Dehours’ Estate makes wines from the family vineyards, following methods of production that respect biodiversity (working the ground and allowing grass to grow between the vines). The wines are eagerly sought after by Champagne enthusiasts for their renowned 'Meunier style'; bold, flavourful and demonstrating a clear terroir-orientated approach.

DOMAINE DEHOURS - LES VIGNES DE LA VALLEE BRUT NV

The “Vignes de la Vallée” cuvée is made mostly with Pinot Meunier and blended with a high proportion of reserve wine from the perpetual reserve, started in 1998. Unlike the “Grande Réserve” the “Vignes de la Vallée” is matured in bottle for an extensive time of 42 to 54 months before being released.  It can be paired with pasta cooked with parmigiano regiano, foie gras, Jabugo ham and matured cheese such as Comté. Drink now – Brut - Dosage 7g/l.

DOMAINE DEHOURS - TERRE DE MEUNIER EXTRA BRUT

The bouquet opens up with warm French baguette notes, balsamic, citrus and grilled toasts. The palate is rich, pure, with lots of tension. The bubbles are silky and teasing all along. It can be paired with oysters, charcuterie platters, panned mushrooms with roast chicken, sushi, maki and sashimi work a treat too. Drink now in a big white wine glass

DOMAINE DEHOURS - OEIL DE PERDRIX ROSE EXTRA BRUT

The Oeil de Perdrix (Partridge eye’s colour) is fruity, round and very delicate. The red berries on the nose are sustained by a lovely citrus backbone. The palate is silky and rich with a composed energy, fresh and clean on the finish. It can be drunk now.

DOMAINE DEHOURS - BRUT NATURE NV

The "Brut Nature" is fully aged on lees, and clarified by natural decanting, without filtration or fining. It is an experimental, 100% Pinot Meunier cuvée that uses a high proportion of reserve wine from a perpetual reserve started in 1998. But most importantly, it is made using naturally selected yeasts (from Champagne Dehours' own vineyard) for the second fermentation in bottle. This, above all else, enhances the identity of the Marne Valley terroir.

Showing nicely, mingling aromas of honey, linden and citrus oil with subtle hints of warm pastry. Medium to full-bodied, pillowy and precise, it’s chiseled and saline, with a delicate pinpoint mousse.

At Champagne Pierre Paillard, Benoit and his sons, Antoine and Quentin, are custodians of an eight-generation-old family business; passionately crafting Champagne with extreme finesse. Their 10 hectares under vine are ideally located in the village of Bouzy and produce only Grand Cru offerings.

CHAMPAGNE PIERRE PAILLARD – BOUZY GRAND CRU "LES PARCELLES" NV

"Les Parcelles" is a blend of different grape varietals and vintages. This excellent Bouzy Grand Cru celebrates every element of winemaking. The "Les Parcelles" is exclusively a Grand Cru blend featuring 30% of reserve wine and the 2017 base wine (70%). It is a blend of 70% Pinot Noir and of 30% Chardonnay. 

The level of sophistication, plus the complexity and the finesse is an endless pleasure. The "Les Parcelles" spends four years in Domaine Pierre Paillard’s deep cellar at 10 degrees to mature and gain tiny, silky bubbles, while developing the house style. This Champagne is sophisticated, versatile and ready to drink.

CHAMPAGNE PIERRE PAILLARD – BOUZY GRAND CRU "LES TERRES ROSES" NV

The Bouzy Grand Cru Rosé is a blend of the 2016 vintage (80%) and some reserve wine (20%). The grape varieties used are Chardonnay accounting for 65% of the blend and Pinot Noir accounting for 35% of which 6% is added as red wine. In Bouzy at Pierre Paillard, the tradition is to blend their Champagne with some “Bouzy rouge”, a special cuvée of dry red wine made from the very qualitative Bouzy grapes. 6% of “Bouzy rouge” has been included into the blend providing a red fruit flavour that you can’t find anywhere else.

It is very elegant and aromatic. The nose is deep, delivering aromas of red fruit and some hints of flowers. The mouthfeel is silky and the bubbles are tiny and elegant. Drink now.
