The "Les Santenots" Pinot Noir is beautiful, complex and refined.

The “Les Santenots” climat is located in the northern, south-east corner of Meursault, facing Volnay in the lower part of the village. This climat is classified as a Volnay Premier Cru for red wines and as a Meursault Premier Cru for white wines. The grapes are manually harvested in cases then sorted on tables, with 100% whole bunches and fermented in tanks for 15 to 18 days. Daily pump-overs and one to two punch downs during the fermentation aids extraction, and the blending of press juice and drop juice adds concentration as does malolactic, which takes place in barrel. The wine is then racked into stainless steel vats for assembly and rest for one month before filtration and bottling, with no sulphur used in the production or bottling.

The wines embody pure elegance, displaying wild red-and-black berries and some lovely spice notes followed by smoky campfire aromas. This wine is powerful on the palate, mirroring the nose alongside a slight tar-like tannin, sappy phenolic texture and brilliant length. Decant for 45 minutes or age till 2030+. It can be enjoyed with venison, veal, duck, quail, kangaroo, smoked meats and charred eggplant. 100% Pinot Noir.

The Volnay 1er Cru “Les Santenots” is harvested by hand and the grapes are sorted in the vineyard on the vine. When the grapes arrive at the winery they all go on the sorting table to refine the sorting. The grapes are then brought gently into the stainless steel vat with 90% of whole grapes for alcoholic fermentation. There is one or two cap punches during the vatting period and the extraction of the tannins, colours and flavours happen within the three weeks of the vatting period and some pumping overs. After the wine is pumped into oak barrels (35% new oak barrels used), the wine undergoes 18 months of  maturation before bottling.
