The “Cab a Bulles” is like a party in the glass, full of energetic red berries and lively phenolics.

Dominque Joseph represents the fourth generation of his family Domaine; a succession of vignerons who have grown and vinified Cabernet Franc in Saumur Champigny. The family’s 13 hectares of vineyards, that he and a small team farm, are located around the village on modestly rolling slopes of clay and limestone over tuffeau. Here, the farming and winemaking is natural, foregoing the use of chemical herbicides, pesticides or other vinous additives.

“Cab à Bulles” is the quintessential Pétillant Naturel. It is composed of 100% Cabernet Franc from Estate vineyards planted to Cabernet Franc around the village of Varrains, with an average vine age of 20 years. Vinification is completed without destemming, with two hours skin contact before direct pressing and cold settling for 24 hours. Indigenous yeast fermentation takes place at low temperatures, in stainless steel tank, and is completed in bottle. It is aged for six months, before riddling and disgorgement – which is done entirely by hand with no SO2 added at bottling.

This bouquet is lively and energetic with bright red berries with lively phenolics. The palate is bone dry with delectable red fruits, herbaceous green peppers and pretty bubbles. At Domaine le Petit Saint Vincent, Dominique Joseph wants to make Cabernet Franc in all its versatility. The 55 plots owned by the Domaine at different locations, soils and sun exposure provide just that. The organic vineyards are harvested by hand and the grapes are destemmed to undergo their maceration in concrete vats for the blended cuvées and in an oak vat for “Les Poyeux”. Low-yielding vineyards consistently offer wines of great depth and complexity. Once the maceration or infusion is done, fermentation is completed with respect to the fruit.

Ancestral method here, first fermentation in bottle, no dosage, no sulphur.
