The “Cab à Bulles” is a party in a glass, full of energetic red berries and lively phenolics. 

Dominque Joseph represents the fourth generation of vignerons who have grown and vinified Cabernet Franc in Saumur-Champigny. The 13 hectares of vineyards, operated by Dominique and a small team, are located around the village on modestly rolling slopes of clay and limestone over tuffeau, a local stone particularly well-suited to viticulture. Farming and making wine is practised naturally, without the use of chemical herbicides, pesticides or other vinous additives.

Cab à Bulles is the quintessential pétillant naturel! It is composed of 100% Cabernet Franc from estate vineyards planted to Cabernet Franc around the village of Varrains, with an average vine age of 20 years. Vinification is done with no de-stemming, two hours of skin contact before direct pressing and cold settling for 24 hours. Natural yeast fermentation initiates at low temperatures in a stainless steel tank and completes in the bottle. It is aged for six months, riddling and disgorgement is done by hand with no SO2 added at bottling.

The bouquet is fun and energetic with bright red berries with lively phenolics. The palate is bone dry with delectable red fruit, herbaceous green peppers and pretty bubbles. This wine is made for enjoying on a deck with fresh prawns and seafood, dips and aperitif snacks. Drink now. 100% Cabernet Franc.

At Domaine le Petit Saint Vincent, Dominique Joseph wants to make Cabernet Franc in all its versatility. The 55 plots owned by the Domaine at different locations, soils and sun exposure provide just that. The organic vineyards are harvested by hand and the grapes are destemmed to undergo their maceration in concrete vats for the blended cuvées and in an oak vat for “Les Poyeux”. A low yielding vineyard is always offering wines of great depth and complexity. Once the maceration or infusion is done, fermentation is completed with respect to the fruit.

Ancestral method here, first fermentation in bottle, no dosage, no sulphur.
