- GRASSL GLASS - MINERALITÉ - $65:
The Vigneron Series features four purposefully designed bowl shapes, each capturing a winemaker’s intent for a particular region. Terroir shines through with this glass. The Mineralité glass’s design brings focus and precision to the nose. The Mineralité glass is ideal for acidic wines with verve.
- CHAMPAGNE PIERRE PAILLARD - BLANCS DE NOIRS "MAILLERETTES" 2012 - $138:
The Blanc de Noirs is pure with lots of complexity, fine and racy. At Champagne Pierre Paillard, Benoit and his sons Antoine and Quentin are custodians of an eight generation family business; passionately crafting Champagne with extreme finesse. Their 10 hectares of vineyard are ideally located in the village of Bouzy and produce only Grand Cru nectars. The Blanc de Noirs is a 100% Pinot Noir from a single vineyard of 0.8 acres called “Les Maillerettes”. It was planted in 1970. This vineyard is the genetic source of all the Paillard’s Pinot Noir and used to replant their other vineyards – it is coveted earth!
This wine is vivacious, showing both the elegance and personality of the Pinot Noir. On the palate, this Champagne is delicate and very fine showing aromas of citrus and touches of petite red fruit berries. Extra Brut – 3.5 grams per liter of dosage. Only 2,500 bottles produced each year.
- CHAMPAGNE DEHOURS - VIEILLES VIGNES 2011 - $119:
The "Vieilles Vignes" is rich and round with lively, silky bubbles. Dehours Champagnes are eagerly sought after by champagne enthusiasts for their renowned 'Meunier style'; bold, flavourful and demonstrating a clear terroir-orientated approach. In 2011 due to bad weather conditions Jerome decided to do an even blend of Pinot Meunier (1/3), Pinot noir (1/3) and Chardonnay (1/3) from his Old Vines on Clay soil. This wine goes though full Malolactic fermentation and are fully aged on lees and clarified by natural settling without filtration or fining.
This blend flows together harmonically with incredible charisma and charm, the bouquet opens up with fresh warm lemon tart and French baked goods, slight balsamic glaze and citrus notes. The palate is rich, pure, with lots of zesty citrus and oyster shell salinity. The bubbles are silky and teasing all along. It can be paired with oysters, cheese platters, grilled salmon, and roast chicken. Pinot Meunier 33%, Pinot noir 34% and Chardonnay 33%- Extra Brut - Dosage 0g/l.
