This Bouzy Rouge is seductive and complex.

The Paillards have been making Champagne and Bouzy Rouge for eight generations in the village of Bouzy, in the sub region of Montagne de Reims. Bouzy is one of only 17 villages in Champagne to have the highest classification of Grand Cru.

The sparkling production of Champagne is world famous, but a boutique and lesser known production of still red wine - made from Pinot Noir grapes - deserves greater recognition. Classified as Côteaux Champenois, the Paillards have always produced stunning examples of this wine, and the 2015 vintage is no exception. It comes from a single vineyard called “Les Mignottes”, located in Bouzy village.

There is a very attractive purity of fruit and a palate that is fresh, driven and silky. It can be enjoyed now by decanting 40 minutes before serving or kept for more than 15 years. It is ideal with poultry, water game or roasted meats. 100% Pinot Noir.

The grapes are picked at perfect maturation from the single vineyard of “Les Mignottes”. They are attentively sorted for quality then carefully pressed. The vines are an average age of 45 years. The alcoholic fermentation takes place in a stainless steel vat. Once finished, the wine is pumped in barrels to undergo its malolactic fermentation. This Bouzy Rouge has spent 18 months in oak barrels before bottling.
