The Bonnes Mares is a massive, yet refined Pinot Noir delivering tremendous complexity.

In one generation, Henri Boillot has dramatically lifted the quality of his Domaine wines and created a boutique négoce, which ranks among the very best in the region. Thanks to Henri’s talent, these wines display such a high level of detail and complexity that defines them as some of the best representatives of Burgundy. The Bonnes Mares Grand Cru is one of Chambolle-Musigny’s jewels, located on the border of Morey-St-Denis.

The bouquet opens on notes of plum, black berry and violet nuances with some lovely earthy notes. The palate is exceptionally rich and fleshy with plenty of pretty tannins and tree sap that lingers to produce a refined finish. A great wine. It can be paired with game, roast poultry and duck (even Peking style). It will benefit from five to six years of cellaring and can be kept up until 2036+. 100% Pinot Noir.

"The Grand Cru Bonnes Mares can be confronting and strong at first but always opens up to a world of refinement with time. Guillaume Boillot, Henri’s son, has made a tremendous example of this climat, concentrated, firm but sensual too."

At Domaine Henri Boillot, the work done in the vineyard is meticulous, following organic practices and aiming for very low yields that naturally concentrate the fruit. The grapes are sorted in the vineyard and harvested by hand. Arriving at the Domaine, the grapes are sorted again and then traditional practices are employed to make the wine. However, Henri and his son Guillaume make sure that the must and then the wine is never overworked. They intervene as little as possible to preserve the essence of the terroir’s identity.
