The Domaine predominantly produces Pinot Meunier in addition to Pinot Noir and Chardonnay. The Pinot Meunier varietal is best suited to this cooler area of Champagne and is a favourite of the Marne Valley. Dehours Champagnes are eagerly sought by champagne enthusiasts for their renowned 'Meunier style'; bold, flavourful and showing a clear terroir-orientated approach. "Les Vignes de Mizy" from Dehours is made from a plot of old Chardonnay vines located in Mareuil-le-Port. This Coteaux Champenois is a still white wine, produced in small quantities only if the quality allows it and especially if the harvest offers the appropriate maturation. In order to have the optimal maturation, the harvest is done at the very end to reach peak maturity. The wine is then aged 20 months on lees in 200 and 300 litre barrels.

The bouquet is generous and expressive at first, offering rich stone fruits, oyster shell minerals, hints of iodine, then light woody notes interlaced with coffee bean aromas. The palate is zippy and zingy with juicy citrus and stone fruits, saline and minerals on the finish. Pair with white seafood like lobster and scallops, fresh salads and white meats. 100% Chardonnay.

  • DOMAINE SAMUEL BILLAUD – CHABLIS 2018 - $59

Samuel Billaud is considered to be one of the select few outstanding producers in Chablis. Testament to this is Samuel’s ability to bring out the unique characteristics of each of his fantastic terroirs. His wines have a distinctive elegance, balance and complexity that is seldom achieved with such precision. The vineyards are on average 30 years of age and are located in the “Les Pargues”, “Le Chapelot” and "Les Quarts" climats.

The Chablis has a sophisticated array of flavours from fresh apple, oyster shell minerality, fresh almond, white peach, citrus flavours to notes of iodine. The palate is driven by a great acidity and a textural mid-palate. This is very fine indeed. It pairs well with natural oysters, seafood or is perfect by itself as an aperitif. You can drink this wine now by decanting it 15 minutes before serving or it may be cellared up until 2025+. 100% Chardonnay.

  • DOMAINE JOSEPH COLIN - SAINT-AUBIN "COMPENDIUM" 2018 - $95

Joseph Colin has been trained at Domaine Marc Colin and worked alongside his brother Pierre-Yves to make the family wines. In 2016, Joseph decided to create his own Domaine, and subsequently, he took about six hectares of vineyards from his family holding, representing about nineteen different appellations, to start his venture. Compendium means ‘syntheses’ in Latin, referring to the blend of 7 of the appellation’s lieux-dits.

The bouquet is vibrant and intense with orange citrus dancing around a flinty, chalky scent that is amplified by white flowers and a touch of sea spray. The palate is well balanced and makes a lively entry, offering orange peel, Granny Smith apples and even a faint tang of liquorice. It can be paired with roast poultry, rich oysters, crayfish, scallops and white fish. You can drink it now by decanting it 30 minutes before serving or cellar it up until 2025+. 100% Chardonnay.

  • DOMAINE DE SAINT-PIERRE - ARBOIS BLANC "CHAPON" 2018 - $79

The Jura region is one of France's smallest wine regions comprising just 2,500 hectares. Despite its size however, it has grown a steadfast reputation for the sheer quality of its wines. Fabrice Dodane, owner of Domaine de Saint Pierre is part of a small group of discerning producers, which includes Jean-Francois Ganevat, who push the boundaries, making stunning, profound and complex wines. The "Chapon" cuvée is from vineyards located on rich grey marl soils located in Arbois.

The nose is seductive with a sense of richness, fresh hazelnut, citrus notes, white peach and hints of green tea leaf. There is a striking minerality and wet stone flavours. It's fresh yet comforting and round. The palate is medium bodied, built on a lovely silky acid spine for a long lingering finish. It can be drunk with charcuterie, poultry cooked in stock, young Comté cheese, white fish and seafood. Drink now or keep up until 2021+. 100% Chardonnay. Dry style. Please decant for 15 minutes and serve in big Chardonnay glasses.
